Not all cinnamon is created equal. What most people know as cinnamon — the bold, spicy, slightly harsh bark sold in every grocery store — is Cassia, a cousin of true cinnamon that dominated the spice trade by virtue of its abundance and intensity. Ceylon cinnamon, Cinnamomum verum, is the original: lighter, more complex, with a delicate sweetness and a warmth that lingers rather than bites. It was the cinnamon of ancient trade routes, of medieval apothecaries, of the spice merchants who built fortunes carrying it from Sri Lanka to Europe. Subtler than Cassia, more nuanced, and significantly lower in coumarin — making it the preferred choice for those who use cinnamon daily and want the full experience of true cinnamon without compromise.

Our Ceylon cinnamon is organic cut and sifted chips — the inner bark of Cinnamomum verum, carefully processed to preserve its delicate volatile oils, cinnamaldehyde, and polyphenols. Pale tan, papery, and layered, with a sweet, complex aroma and a warmth that is unmistakably different from Cassia. Certified organic and packed to order in small batches.

A note on preparation: Ceylon cinnamon chips are ideal for decoctions, teas, and infusions where the delicate flavor can fully express itself. They also tincture beautifully and make an exceptional addition to chai blends, mulled drinks, and warming formulas.

How to Use

As a decoction (tea): Simmer 1–2 teaspoons of Ceylon cinnamon chips in 8–10 oz of water for 15–20 minutes, covered. Strain and enjoy. Naturally sweet and warming — delicious on its own or blended with ginger, cardamom, and black pepper for a classic chai-style warming tea.

As a tincture: Ceylon cinnamon tinctures beautifully in alcohol or glycerin. Use a 1:5 ratio in 40–60% alcohol for a warming, aromatic tincture. Glycerin extraction produces a naturally sweet preparation ideal for children's formulas.

Culinary use: Add chips directly to soups, stews, broths, and mulled drinks during cooking and remove before serving. Grind in a spice grinder for use as a culinary spice — the flavor is noticeably more delicate and complex than grocery store cinnamon.

Blending: Pairs beautifully with ginger, cardamom, and clove for warming chai blends, elderberry and clove for immune support syrups, or ashwagandha and cardamom for Ayurvedic adaptogen formulas.

Storage

Store in an airtight container in a cool, dry place away from direct sunlight. Properly stored, Ceylon cinnamon chips retain their potency and flavor for 2–3 years.
