The ancient Greeks called it melissa, after the honeybee, because bees were irresistibly drawn to its flowers. Herbalists have been drawn to it for the same reason for over 2,000 years: it is simply one of the most pleasant, versatile, and reliably effective herbs in the apothecary.

How to Use
As a tea: Steep 1–2 teaspoons of tea cut lemon balm in 8 oz of just-boiled water for 5–10 minutes, covered. Bright, clean, and gently lemony — one of the most pleasant single-herb teas in the apothecary. Naturally caffeine-free. Delicious hot or iced. A perfect afternoon wind-down or pre-sleep ritual.
Blending: Lemon balm is one of the great blending herbs — it brightens and softens everything it touches. Pairs beautifully with chamomile and passionflower for sleep, with holy basil and ashwagandha for stress, with peppermint for digestion, and with rose and hibiscus for a bright, floral everyday tea.
Tincture: Macerate in high-proof alcohol for 4–6 weeks. Best made fresh — lemon balm tincture made from dried herb is good; made from fresh herb is exceptional. A classic nervine tincture base.
Culinary: Use in lemonades, syrups, desserts, salad dressings, and herb butters. One of the most underrated culinary herbs — bright, fresh, and versatile.
Storage
Store in an airtight container in a cool, dry place away from direct sunlight. Lemon balm is more volatile than many herbs — the aromatic oils that make it effective dissipate faster than most. Use within 12 months for best potency and flavor.
